Healthy Breakfast Recipe You Should Try

We all have our favorite healthy breakfast recipes, but it can be hard to come up with something new that we enjoy. This bowl of oatmeal is a quick and easy recipe perfect for both weekday mornings or weekend brunch. It has more protein than most breakfast options and less sugar than many others, so you won’t get the jitters (or indigestion) later in the day. The strawberries add just enough flavor without being overpowering, so they are complementary to the rest of this hearty dish.

You could make this recipe even healthier by using a low-sodium broth instead of salt, or by adding raisins, dried cranberries, or nuts instead of the strawberries. There are lots of other tasty oatmeal recipes out there, but you may find that this one is the easiest and fastest to prepare in the morning.


1/2 cup old-fashioned rolled oats (preferably organic)

7 ounces non-dairy milk (we like almond milk, coconut milk, or cashew milk)

Fresh fruit to taste (strawberries are our favorite)

1. In a large bowl, combine the oats, non-dairy milk, and fruit of your choice. Mix well and refrigerate for two hours.

2. Stir again and enjoy!

Smashed Avocado with Fried Egg

This combination is one of our favorites and it’s easy to make for a healthy breakfast on the go or as a brunch dish. The combination of avocado, egg, and sea salt or nutritional yeast is a delicious beginning to any day. We’ve also used this recipe to prepare sandwiches by adding spinach and tomatoes. These are great for lunch, too.


4 eggs, slightly beaten

1 avocado, smashed to yield 1/3 cup of avocado

1 tablespoon nutritional yeast flakes

Pinch of salt or sea salt Preheat a nonstick skillet over medium heat and lightly coat with olive oil or ghee. Place each egg on a separate small plate or bowl as you prepare them, and then place a small amount of yolk in the center of each one (about 1/4 ounce).

Remember that the more you eat vegan, the easier it will become to pick out healthy foods versus unhealthy foods. So don’t go overboard with cheese or meat substitutes; substitute them with fruits and veggies instead.
